June 7 – Avocado Chocolate Mousse Tarts

This is hands down one of the easiest, healthiest, and yummiest recipes we’ve tried to date – and yes, those 3 adjectives CAN describe the same treat! There are several versions of this recipe floating around, so feel free to experiment after making them the first time, but this seems to be a great basic start.

For the crust:

  1. Combine 8(ish) dates, 1.5 cups shredded coconut, 1.5 cups walnuts, & pinch of salt in food processor.
  2. Process a few minutes until ingredients are fine and become dough-like. CAUTION: Don’t over-process: letting it go too long will break down the coconut too much, releasing a LOT of oil, which will throw off the texture and taste.
  3. Press 1 tablespoon of crust mixture into bottoms of mini-muffin tin (or whatever equivalent you would like). Be sure to press the middle down a bit so there’s a nice pocket for the mousse.
  4. Refrigerate for 1 hour.

For the mousse:

  1. Combine 2 mashed avocados, 1/2 cup agave nectar, and 4 tablespoons cocoa powder in food processor. You can substitute (real) maple syrup for the agave nectar if you want a slightly earthier than sweeter taste.
  2. Process until thick, creamy, & relatively lump-free (the sides might need to be scraped down a few times).
  3. Taste! Depending on the ripeness of the avocados, you may or may not need to add a bit more cocoa or agave, or you might even want a pinch of salt…start with this base, but make sure your tastebuds like it!

Fill each crust cup with mousse, top with fresh fruit of your choice, & enjoy!
