April 26 – Flourless Oatmeal Cookies

These healthy cookies are quick, simple, & delicious! As a warning, the yield is very small (after doubling this recipe, I made 28 teaspoon-scooped cookies). Feel free to sub out the cranberries and sunflower seeds for basically anything you’d like (raisins, nuts, chocolate, etc). I intentionally made them this small popable & shareable size, but I think they would hold up better a little bigger (at least a T per cookie).

  • 3/4 cup rolled oats
  • 1/4 tsp bakingĀ soda
  • 1/8 tsp salt
  • 2 T brown sugar
  • 1 T white sugar
  • 2 T cranberries, chopped
  • 2 T chocolate covered sunflower seeds (found at Trader Joe’s)
  • 1 T oil or pre-melted margarine
  • 1-2 T milk of choice (start with 1…vanilla soymilk adds a nice layer of flavor)

Blend first 5 ingredients together in a food processor or blender. Mix with other ingredients, form into cookie shapes, and place on a greased cookie sheet. Cook 6 minutes at 375 F.
